BILLECART-SALMON

The fruit of the union of Elisabeth Salmon and Nicolas-François Billecart, Maison Billecart-Salmon, founded in 1818, continues to make its mark on the world of Champagne. Located not far from Epernay, in the village of Mareuil-sur-Aÿ to be precise, Maison Billecart-Salmon is now in the hands of the 7th generation. The solid work begun by the Billecart couple has been perpetuated by subsequent generations. The many efforts made, the quality of the cultivation and of the final products have also earned this independent house numerous distinctions.

Location of Maison Billecart-Salmon

At Billecart-Salmon, we believe in striving for excellence and, above all, quality. This ideology is reflected in the vineyard's cultivation methods. The use of "ancestral" methods, based on the introduction of draught horses and sheep, enhances soil biodiversity and improves its porosity, which has a positive impact on the crop. Covering an area of 110 hectares, the Billecart-Salmon vineyards are planted with Chardonnay, Pinot Noir and Pinot Meunier. To ensure the right expression of aromas and authenticity of taste, vinification is carried out cru by cru and grape by grape. Thermo-regulated stainless steel vats are used to ensure long fermentation at low temperature.
