BILLAUD-SIMON

Domaine Billaud-Simon was founded in 1815, in the heart of the historic Chablis appellation. Today, the estate is run by Bernard Billaud. For this lover of the terroir, white wine is a treasure in a bottle, passed down through the family from generation to generation. After careful harvesting, the grapes are vinified and aged in the Domaine's cellars. Aging lasts between 14 and 18 months, depending on the vintage. The Domaine's signature is its old vines, to which special attention is paid at every stage from vine to wine.

The geographical location of Domaine Billaud-Simon

Located in the Burgundy region, in the Chablis terroir, Domaine Billaud-Simon covers just over 16 hectares of vines, where the parcels of old vines have a particular geological feature. They are composed of clay-limestone soils dating from the Kimmeridgian era. These soils contain algae, shells and marine sediments dating back 155 million years. The iodine present in the terroir gives this great Chablis white wine a uniqueness, full of minerality. It produces a white wine from Chardonnay grapes.

The exceptional terroir of Chablis enables Bernard to produce Chablis Grand Cru appellation wines, including Les Preuses. Domaine Billaud-Simon's white wines are concentrated, pure and long-lasting. They blend fresh citrus notes with the minerality inherited from the Kimmeridgian soil.
