PAVELOT

Jean-Marc and Hugues manage Domaine Pavelot in Savigny-lès-Beaune, in the heart of Burgundy's Côte de Beaune region. The estate has been handed down from generation to generation, respecting the terroirs so dear to Burgundy viticulture. They produce a dozen or so white and red wines, each with its own character, depending on the climates and appellations. Jean-Marc and Hugues Pavelot harvest their wines by hand andage themin oak barrels.

Location of Domaine Pavelot

The Jean-Marc and Hugues Pavelot estate comprises 13 hectares of vines located mainly in Burgundy, in the commune of Savigny-lès-Beaune, as well as in Aloxe-Corton and Beaune. Planted with Pinot Noir for the red wine and Chardonnay for the white, the domaine's vines are tended according to the principles ofsustainable agriculture. The soils are ploughed. Pruning and disbudding help control yields.

Domaine Pavelot offers a wide range of geological and topographical features. The plots are spread over two hills, between 220 and 360 meters above sea level, with multiple orientations: south, southeast and northeast.

Domaine Pavelot wines

With this variety of climates, Domaine Pavelot offers a wide range of Burgundy wines, including one Grand Cru and three Premiers Crus. For white wines, Jean-Marc and Hugues Pavelot produce Corton Grand Cru, a wine suitable for aging, as well as Savigny-lès-Beaune Village, drinkable from the first year.

In red Pinot Noir Premier Cru, Domaine Pavelot produces Savigny-lès-Beaune Premier Cru on 7 different terroirs. Aux Guettes, La Dominode and Aux Gravains are the main ones. There's also Pernand-Vergelesses Premier Cru, a wine that keeps well, and Beaune Premier Cru Les Bressandes, which can be kept for 10 to 15 years. Finally, Bourgogne Rouge, Savigny-lès-Beaune Village and Aloxe-Corton Village complete Domaine Pavelot's AOC red wine range.
