PILLOT PAUL

The Pillot family has been linked to wine since the XIXᵉ century. However, it was not until the 1960s that Domaine Paul Pillot began to grow. Today, the estate is run by Paul's two children, Thierry and Chrystelle. From the moment they took over the estate in 2004, they have been developing the cultivation of the vines and the vinification of the wines. The Pillot children use fewer new barrels. Ageing also lasts longer than before. Domaine Paul Pillot produces Burgundy wines that combine freshness, aromatic intensity and minerality.

Location of Domaine Paul Pillot

Located in Chassagne-Montrachet, in the heart of Côte de Beaune and Burgundy, Domaine Paul Pillot covers 13 hectares. The vineyard is located in the Chassagne-Montrachet appellation, on the Grande Montagne and Saint-Aubin sides. It benefits from a particular terroir, with clay-limestone, stony and marly soils. It also includes parcels in the Santenay and Saint-Aubin appellations.

Domaine Paul Pillot wines

Domaine Paul Pillot is run in an environmentally-friendly manner. The grapes are harvested by hand at full maturity. The estate produces refined, intense wines. Each vintage is thefullest possible expression of the terroir. The domaine's wine list includes great wines for ageing, mainly whites, but also reds.

Domaine Paul Pillot is an established name in the Chassagne-Montrachet appellation. It produces wines from six terroirs in Chassagne-Montrachet Premier Cru: Clos Saint-Jean, Les Caillerets, Les Champs Gains, Les Grandes Ruchottes, La Grande Montagne and La Romanée. Domaine Paul Pillot also produces wines in the Saint-Aubin and Santenay appellations. In Saint-Aubin, there are two Premiers Crus: Saint-Aubin Les Charmois and Saint-Aubin Les Pitangerets. Burgundy Aligoté, Burgundy Chardonnay and Burgundy Pinot Noir are also represented at the domaine.
