DAUVISSAT JEAN & FILS

Founded in 1955 in the Chablis region, Domaine Jean Dauvissat Père et Fils made a fresh start in 2011. Fabien Dauvissat, the founder's grandson, has redirected the family heritage: back to respecting the vines and the soil, and bottling on the estate. The results have been immediate. Today, the domaine produces excellent white Burgundy wines, including some very fine Chablis Premiers Crus. It is in no way related to other estates bearing the Dauvissat name, of which there are many in the Chablis region.

Domaine Jean Dauvissat Père et Fils is located in Milly, a few kilometers from Chablis. This north-west Burgundy terroir is characterized by limestone soils rich in fossilized oysters. The estate's vineyards cover 22 hectares, spread throughout the Chablis region. As throughout the Chablis appellation, the grape varieties are exclusively Chardonnay.

Domaine Jean Dauvissat Père et Fils wines

The vines of Domaine Jean Dauvissat Père et Fils are cultivated biodynamically. Each plot is vinified separately. The grapes are pressed over a long period, followed by a natural fermentation lasting around ten days. The wine is aged in stainless steel vats for between one and two years, depending on the vintage and appellation. The wine is lightly fined and filtered before bottling.

Domaine Jean Dauvissat Père et Fils produces exclusively white wine. Its flagship wines are Chablis Premiers Crus. These include Chablis Premiers Crus Fourchaume, Côte de Léchet, Montmains, Vaillons and Homme Mort. These top-quality white wines can be kept for up to 10 years, or even 15 years for great vintages. Alongside these wines, the domaine offers several cuvées in the Chablis appellation and a Petit Chablis.
