WASENHAUS

Christoph Wolber and Alexander Götze run the Wasenhaus winery in Staufen, south of Freiburg im Breisgau, Germany. Friends since their oenology studies at the Ecole de Beaune in Burgundy, they founded the estate in 2010. After working at some of Burgundy's finest biodynamic estates, including Pierre Morey, De Montille and Leflaive, they decided to return to Germany. There, they created the Wasenhaus winery and produced their own wines. They chose the wine-growing region of Baden, in a valley that separates them from the French Vosges mountains and the vineyards of Alsace. The first Wasenhaus vintage dates from 2016.

The Wasenhaus estate in the Baden region includes the first parcels purchased on the Ehrenstetter Oelberg and Ehrenkirchener Kirchberg hills. Others have joined the estate. These include very old vines in theKaiserstuhl appellation, northwest of Freiburg. Christoph Wolber and Alexander Götze supplement their supplies by buying grapes from other estates. Their wines are produced from a variety of grape varieties, including Pinot Blanc, Pinot Noir and Chardonnay. The vines are grown according to the principles of organic agriculture. The grapes are harvested by hand. Domaine Wasenhaus does little in the cellar, preferring to age its wines in oak barrels.

Domaine Wasenhaus wines

Domaine Wasenhaus produces red wines such as Spätburgunder, Vulkan and Bellen. All three are made from Pinot Noir grapes. For white wines, Christoph and Alexander offer Filzen, a Chardonnay to be drunk young. Domaine Wasenhaus also produces Weissburgunder Möhlin. This white wine, made from Pinot Blanc, is dry and rather light.
