GILLET EMILIAN

Domaine Émilian Gillet is one of three estates owned by the Thevenet family. It is located in Clessé, a commune in Burgundy 's Haut-Mâconnais region. Gautier Thévenet heads this winery, which was founded in 1988 by his father, Jean Thévenet. The domaine bears the name of a vine-growing ancestor, Émilian Gillet. It produces only white Burgundy wine. The vineyards are cared for with respect for local know-how and ancestral techniques.

Domaine Émilian Gillet extends over some ten hectares, in the terroir known as la terre de Quintaine, after the name of the hamlet located between Clessé and Viré. The vineyards are planted in clay-limestone soil, with marl outcrops. Cultivation practices respect nature and the terroir, following the principles oforganic farming. Slow vinification and long barrel ageing are favoured. Gautier Thévenet intervenes very little, both in the vineyards and in the cellar, in order to respect the work of nature. Domaine Émilian Gillet is located in a terroir that perpetuates the tradition of wines known as "levroutés" because of their mellow character.

Domaine Émilian Gillet produces only Chardonnay white Burgundy wines. Situated on a special terroir, it enables us to produce highly distinctive wines, both fresh and mineral. The limestone of the soils contributes to their aromas of white flowers and citrus fruit. As Gautier's father, Jean Thévenet, used to say, "terroir is to wine what a composer is to music, the winemaker being only a conductor".

Gauthier Thévenet produces Viré-Clessé on this estate, a wine to be enjoyed after a few years' cellaring. He also produces Viré-Clessé Quintaine. Keep it in the cellar for ten years before drinking this "levrouté" wine. It will fully reveal its aromas.
