PATAILLE SYLVAIN

Sylvain Pataille, an oenologist by training, has been working since 1999 to develop the wines of his domaine, located in Marsannay-la-Côte, a commune south of Dijon in Burgundy. He produces red wines from Pinot Noir and white wines from mostly Chardonnay and Aligoté. He is keen to bring Aligoté back into fashion, a grape variety that is sometimes disparaged. An advocate of the terroirs of Marsannay and Chenôve, he is now a proud ambassador for them.

Sylvain Pataille's vineyards cover more than 17 hectares, just outside Dijon. Most of the parcels are located in the Marsannay appellation, the first appellation north of the Côte-de-Nuits. And let's not forget the vines planted in the Chenôve commune of Dijon, which produce the little-known Clos du Chapitre.

Anorganic farmer since 2008, Sylvain Pataille does little in the vineyard or the winery. Keen to let nature and terroir express themselves, he produces his wines from old v ines and harvests them by hand. The wines are sometimes aged for more than two years.

Domaine Sylvain Pataille wines

Domaine Sylvain Pataille produces red and white Burgundy wines, Chardonnay and Aligoté. In Pinot Noir, he offers Marsannay Clos du Roy, Marsannay Les Grasses Têtes and Bourgogne Chapitre, all crisp, generous wines.

In white Chardonnay, Sylvain Pataille produces Bourgogne Le Chapitre, a fine, well-balanced wine. In Aligoté, the estate's flagship white wine, he offers his Bourgogne Aligoté, made from hillside plots rich in red clay. A powerful wine matured in barrel on lees, it is delicious and fresh. Its flavors are of citrus fruit and white flowers.
