Head for kangaroo country, to one of Australia's iconic vineyards: Domaine Bass Phillip. Its finest vintages are made from Pinot des Ducs de Bourgogne and Chardonnay! Their secret: to minimize the impact of man and artifice so that the grape varieties express the character of "Mother Nature" to the full. Domaine Bass Phillip has been biodynamic since 2002, adding a key factor to the complexity of their wines as they follow the lunar cycles throughout production. Today, Jean-Marie Fourrier, an illustrious Burgundian winemaker, has taken over the reins of production. Who better than a Burgundian to develop the exhilarating aromas of Pinot Noir and Chardonnay through a specific climate and subsoil.
The Bass Phillip estate also produces other wines made from Nebbiolo, the king of Piedmont grapes, Gamay and Gewurztraminer. Thanks to a harvest that is 2 to 4 times smaller than the Australian average, they bring out the bewitching fragrances and sensational aromas of these grapes, while the Gewurztraminer brings out floral aromas with natural acidity and minerality. This wine can be cellared for several years for greater persistence on the palate. The Chardonnay Premium is a high-class cuvée from South Gippsland, seducing connoisseurs with its vanilla and spice aromas.
